I was at the shop the other day and checked out the Nikon D60. What a nice little camera. The kit comes with an 18-55mm VR lens. There is also a kit that comes with both the 18-55mm VR and the 55-200mm VR at a very good price. Of course, you could just get Nikon's excellent 18-200mm VR lens and buy the body by it's self. That is what I would do. It would save me swapping lenses.
I went out, into the parking lot of the shop, and shot off some happy snaps.
Picture style was set to "Vivid". All other picture settings were set to auto. I enabled "Active D-Lighting" (helps not to blow out highlights). WB was set to "Cloudy". I did not use any exposure compensation whatsoever. All exposures were handled by the camera's matrix metering. VR was on. (duh)
