Visiting www.cookandroid.com I was amazed at the number of cores ROMs there were, any suggestions as to which is the best one? Why are there so many variants?

Well, you won't get a straight answer to that question. Every person's answer will be different... The ROMs are based upon user preference so one guy will like a certain ROM, and somebody else will not like the ROM at all. Personally I use LeeDrOiD 2.0a for my ROM, I like it because it is fast, clean, and I don't have any problems with anything that I use on a daily basis... Check the ROM threads on XDA (http://forum.xda-developers.com/forumdisplay.php?f=628), they usually have the known problems listed on the first couple of posts of the thread, check whether it is stuff that you regularly use or not, and decide that way.
LeeDrOiD is one of the most popular ROMs and it does not have any problems listed by the time of this writing. But like I said, read through the XDA forum and see what the guys comment about it and decide for yourself. There is unfortunately no such thing as the "best" ROM...

Okay, now I've been trying to load the ROM but I have to root it first, the problem is I'm using 2.2 and hboot 0.92
It looks like I have to take hboot back to 0.80 in order to root it. Has anyone done this using this guide? Or alternatively does anyone have a better one?

Right, managed to come right by pulling my hboot version back and using unrevoked on a non Windows 7 x64 based system :D
and im a big cyanogen supporter
Can I ask why? Trying out Leeroid not being that impressed by it (problems with the camera etc)

Problems with the Camera? Try updating your Radio to the latest version. The thread of XDA warns users that if they don't upgrade to the latest Radio there are issues with the camera.
I'm also a huge CyanogenMod supporter. Currently rocking v6.0.1 after being on OpenDesire (an even more minimalist rendition of CyanogenMod) for over a month.
