So called "super-fruits". FFS, they're just sugar bombs with a few more vitamins in them. They do not cure cancer, make you more appealing to the opposite sex, or make your dick grow larger.
Veganism and vegetarianism - we are human beings - we are omnivores. Source from ethical suppliers if you like, but don't cut out a pivotal source of nutrition for the sake of pretending to care about animals. Your efforts will have no impact at the end of the day. We are, and will for the foreseeable future remain omnivores. No amount of hippie-drum-circling will change that.
Raw food diets - most raw vegetables (which most of these morons only eat) cannot be processed by our bodies in their raw state. Yes, they contain more nutrients, but the human body cannot break many of these down properly, so you just schit it out of your body. You also deprive yourself of the good cholesterol in your system so you are, in fact, incredibly unhealthy. Especially if you ever encounter fat at some point in the remainder of your life. Take off your hemp-beanie, slap yourself across the face and go cook some bacon, you dipschit.
Iced teas - most of them are not teas at all. They simply have tea flavourings added. And they're dosed so full of sugar that the health benefits of tea are negated by all of the problems associated with massive sugar spikes to your system, and overloading your body with sugar. Iced teas are not a health food item.

This is an ever-evolving one, from stuffed crusts, to triple deckers, to putting sauce all over the thing, to dessert pizzas, to pizza rolls and even microwavable pizzas. Fsck you - that's just dough with stuff on. It's about as much a pizza as a raw food diet is healthy.
The fat brigade - you people really tick me off. Fat does not necessarily cause fat. This obsession to strip fat from everything is ridiculous and must be stopped. Many fats are essential to, you know, actually living. Many fats are incredibly good for your cholesterol. Eat the right fats - don't just cut them out. You the public demanded this from producers and now you need to realise that you were imbeciles and start buying foods with healthy fats. Let's bring fat back into our food, for the love of the flavour gods.

They're both equally crap in my book. Neither are decent renditions of pizza. I'd rather travel 5 minutes further (for most neighbourhoods in SA) and find a local wood-fire pizzeria, or at the very least, a Pizza Perfect. But then again, this thread isn't about crap pizzas - there are tons of those flying around already. This is about food-fads.
Another one that grates my carrot is the sushi fad, with everyone and sundry mixing wasabi with their soy, or drenching soy all over a plate of sashimi and claiming that's how it is traditionally done. Er, no it isn't. Some sashimi is served with soy sauce on the plate, if the Itamae thinks the fish warrants it. Wasabi is never mixed with the soy in traditional Japanese culture. This is a western craze started to hide the fact that they weren't using actual wasabi. This only serves to limit the combination of wasabi and soy that you have. In fact in most reputable Japanese restaurants, only soy is served and is intended as a quick dip for seasoning, not to be soaked up like most people do. Wasabi is embedded in the sushi if necessary.
So stop pretending to know so much about Japanese culture and food by mixing your mustard, horseradish and green food colouring paste into your soy sauce - you just look foolish to the wait staff, Itamae and others who know better. And stop drenching your sashimi in soy sauce. Treat soy sauce as you would salt - add for flavouring in small doses...

I haven't been to Japan, but I'm willing to bet over there they don't

My gripe isn't with the process, but the reasoning for it in the first place. It makes no sense to mix these things as the paste is barely soluble in soy, and it makes no sense to drench fish in soy. Might as well eat textured soy sauce. Yet when questioned, people are adamant that this is the way it is supposed to be eaten. My gripe is the arrogance, borne out of the snobbish class we assign to sushi here and in many western countries.
And I'm referring to the way people eat it, not how it is prepared for them. Pizza - put in mouth - masticate. Hotdogs - add sauce and relish of choice - put in mouth - masticate. Fish and chips - add sauce if you like - put in mouth - masticate. Boerewors - put in mouth - masticate...

We had breakfast with the family at the vegan place at Muldersdrift called "Leafy greens" on Sunday. During the the last bit of the morning there was someone on the grounds braaiing a chicken on the spit and it smelled awesome.Talk about cruel and unusual punishment.
The first thing I did after getting home was take out a 800g 2" t-bone steak from the fridge-Cooked according to the DJ how to cook a steak method. And I must say that it has been the best steak in ages. I really do feel sorry for the vegans.

Although I agree completely on the snobbery associated with people who eat their sushi by dissolving the wasabi in the soy (and a lot of my Asian friends have given me lots of lip when I told them that that is not the right/original way it is done). In any case I will say that I enjoy putting ginger on some of my sushi just because I enjoy the taste. I know it's not the "right" way but it's the way I like it ;)

I don't really understand this. I don't personally add the ginger and whatnot, but if it tastes nice, why not? Going on about the correct way of eating sushi (You use chopsticks? Sushi's traditionally a finger food) is a bit pretentious in itself in my opinion. If people like it the way they eat it, leave them be.

Yeah I agree, I think DJ will also agree, I think the problem there is you get people that eat it a certain way and then "look down" on anyone that doesn't eat it that way as being an idiot for not doing it correctly. There is just something about sushi eaters. I often go to restaurants and make one moer of a fun time eating sushi in all different ways, and then you get people that look at you as if you went to school on the short bus. As if eating sushi a certain way elevates them in terms of social status. These people can only be laughed at.

its not exactly the same it is made with slightly different ingredients than a normal chocolate cake...

Yeah, but it is a sweet type of crust which I will describe as a crust of doughnut maybe and it is thing so after fried it is quite crispy and Ice Cream is frozen solid still on the inside... it really is heavenly.

Also to all the one's moaning about sushi, does it really matter on how someone else eats their sushi, they don't come to you and go oh no sorry you shouldn't have mayo on a burger or what ever do they?

You know, the reality is that most sushi we eat is hardly recognisable as sushi. So you might as well do what you like to it. But if you do happen to go for a really top quality sushi/sashimi meal, please don't do the wasabi-juice mixture thing. You will just ruin the delicate flavours. It's not snobbery, you wouldn't get a 4-star meal and slap ketchup on it either.

I think you misunderstood me. My friends mix their wasabi with their soy and then look down on me when I don't do the same. That's what I meant by "snobbery". Just because they're Asian they immediately think that they know better in this regard.

I dip my sushi in soya and top it with wasabi and ginger too but only because I haven't found half-decent sushi here yet.

Absolutely. My issue is with the prententiousness of the reasoning. I do see the irony in the snobbery of calling them out on it, but I think it's high time...:D

Yes, the cream cheese icing is supposed to be used, but is usually completely overlooked in place of "cheaper" icings. Red velvet sold by most places is just a gimmicky ruse that they charge more for, because some gay bakers in New York pout over the stuff - and they're gay bakers from NYC - they must know what they're talking about.
The red these days comes from food colouring as they don't understand the science behind the process - it is the acidic reaction of buttermilk or another acid with the cocoa that brings out its natural red anthocyanin. They also don't use traditional alkaline-based cocoas, but these days its just easier to add red food colouring. But regardless of how they achieve it, red velvet/devil cake is still just different coloured chocolate cake. I can also dye vanilla cake blue and call it Azure Allure. But I stopped doing that when I was a kid.
I don't mind people having fun with the colours - food should be fun. I have a problem with these people promoting red velvet as anything but a chocolate cake, and those snobs paying a fortune for it, all the while convincing themselves they're eating something different...

I do not advocate overeating or eating huge portions of any food, but what annoys me are chefs who concentrate more on the presentation than the actual food and put a tiny morsel of food in a just-so way on the plate with the ever-present sauce dripped in an artful way on the side. More for show than for eating.

There's nothing wrong with the California roll. The combination of the rice, soy, sea weed cucumber/avo and sushi and the sesame seeds make a unique and complex flavour.

That's really what I'm referring to. Other proper sushis you dip fish first but these days all the sushis we get here are pieces of fish covered in wads of rice.

Bloody sweet chilli sauce! Served with or on everything!
It is overly sweet, over-seasoned, thick gloop with a few dried chillis in for good measure. It sometimes complements the right food, but these days people drench it all over everything. Any deep-fried appetiser is almost guaranteed to be served with bottled, sweet chilli sauce for some reason. Pisses me off.
It's also hardly a decent ingredient in any dish. It is too sweet, not hot enough, and far too full of vinegar to add anything of substance to dishes, unless you're making a basting...

See this is my problem with the stuff. Just because it is served crispy, people assume sweet chilli is the go-to accompaniment. What matters is what is being tempura battered here, not the batter itself. There are far better sauces for tempura prawns than sweet chilli. And don't even get me started on what people try to pass off as tempura these days. Seems anything with a batter is considered "tempura" these days, as long as it is served with sweet chilli.

I have one food item which goes well with sweet chili sauce and it's a total kludge but quite delicious.
Take a pack of filo pastry, a pack of crab sticks and a pack of mozzarella. Wrap a crab stick and a slice of mozzarella into a parcel in the filo pastry, like a spring roll type of thing. Deep fry. Serve with sweet chili sauce.

Tempura is just a batter. You can tempura just about anything. The sauce should accompany what is being battered, not the batter itself...

I don't mind people having fun with the colours - food should be fun. I have a problem with these people promoting red velvet as anything but a chocolate cake, and those snobs paying a fortune for it, all the while convincing themselves they're eating something different...
I actually enjoy the taste(compared to normal chocolate/vanilla cake), well i have only ever eaten it at upmarket restaurants, and was quite impressed with the flavour. Then again the price of the Red Velvet and the Normal cake was exactly the same.

It's great if done well. I've had 2 types - the one was a thin coating that just added a bit of crunch. The other (restaurant in CT) has a thick coating that's almost like a ginger biscuit. Not entirely sure it actually is fried despite what it says on the menu, but the combination works.
I dip my sushi in soya and top it with wasabi and ginger too but only because I haven't found half-decent sushi here yet.

Bloody sweet chilli sauce! Served with or on everything!
It is overly sweet, over-seasoned, thick gloop with a few dried chillis in for good measure. It sometimes complements the right food, but these days people drench it all over everything. Any deep-fried appetiser is almost guaranteed to be served with bottled, sweet chilli sauce for some reason. Pisses me off.
It's also hardly a decent ingredient in any dish. It is too sweet, not hot enough, and far too full of vinegar to add anything of substance to dishes, unless you're making a basting...
I'm with you on this one. And more so when another sauce is listed in the menu and you all you get is some crappy sweet chilli sauce. I want what was advertised!
I have one food item which goes well with sweet chili sauce and it's a total kludge but quite delicious.
Take a pack of filo pastry, a pack of crab sticks and a pack of mozzarella. Wrap a crab stick and a slice of mozzarella into a parcel in the filo pastry, like a spring roll type of thing. Deep fry. Serve with sweet chili sauce.
That sounds... Yeah, I'll pass.

That's not a trend. That is a tradition. Scones were traditionally served with the option of a preserve and clotted cream, or preserves and cheese. I don't understand why they are ever served with muffins though - that part throws me completely...

Also on the sushi thing - mixing wasabi/soya, rolling chopsticks etc. are considered 'rude' for some reason, but I think its a culture thing that has largely been lessened.
For example I read a site a while back with sushi eating 'guidelines' where it said it is also considered rude if you eat all the sushi on the plate since you would make the chef think he gave too little. Over here that would more likely be considered rude and wasteful. (Plus honestly who ate sushi until they were full, and how much was the bill?)

The problem are the fat-brigade that I had a dig at earlier in the thread - they cringe at the sight of the stuff and I have a family member who refuses to eat the stuff after finding out as a kid that it is full of oil. Good oils, but oil nonetheless. Which is why they're nowadays full of emulsifiers. I make my own - just chuck roasted nuts in a food processor and drizzle a little peanut oil towards the end to emulsify it in. Season to your heart's desire. That is, after all, how the producers make it...

Tried it once and it was horrid. And I got food poisoning too. I'd rather have Debonairs, if I had to pick.

It is in my nature to immerse myself in things that interest me. A couple of years ago I was trying to explain to a friend why sealing meat is a myth, and he asked me then what the point of browning it was? I was stumped. So I googled it and came across a few sites addressing the Maillard reaction in meats. A few days later I watched a Heston Blumenthal show about the very same thing where he explained it in layman's terms. I was hooked. I've since spent a lot of my spare time researching food and the science behind it, meeting food scientists and teaching myself the business, where I am now at the point of trying to understand the thermodynamic nature of steam and how it promotes long amino acid strands in non-high-protein ingredients. That sort of thing interests me these days because it pertains to so many future possibilities...

Like I said, if something tickles my fancy, I'll do all I can to learn about it. From quantum mechanics to amino acids to philosophy to history to current affairs to politics etc. I love to learn, and I reject the notion of institutionalised learning being the be all and end all of education...

Had them once and didn't like them. Their base was all wrong; their tomato sauce for the base tasted like nothing; they were far too skimpy with the toppings; and it had the wrong mouth-feel. I've never eaten there since...

Some places don't have nice tap water, dunno if it's the old pipes in buildings etc or the local processing plant. I carry tap water from home with me but if that runs out I have no issue buying water if the local tap water tastes crap.

Don't know if 8 glasses a day is bad for you, but anyone actually paying for water (other than on your utilities bill) seriously annoys me too. How much work is it to pour tap water into a bottle and carry it around with you??

But at some stage I was constantly sick with stomach ailments (a few different ones, cramps, diarrhea, flatulence and so on), this lasted a good couple of months on and off. One evening, I noticed that water that comes from the tap was a weird brown color, so being the addict I am I decided to just get some bottled water. Low and behold it was on special for like R10 for 10liters or something and I bought a few. After about a week of drinking this water my stomach got better, so I tested it for a while longer and ever since switching to bottled water permanently, I have no issues with my stomach anymore. So whatever it is attributed to (pipes, treatments or whatever), switching to bottled water made a huge difference. I was being poisoned by my tap water. Now that I buy water the whole time, I also tend to drink a bit less, so it's a win win situation for me.
Depends where you live, how far you are from your water source. I live next to the resevoir and DBN has excellent tap water. I honestly cant the difference.

Yep yep, I always take a 2l of fridge water if I'm going some distance. But there have been times when buying was necessary.

I wasn't suffering from water intoxication, that much is sure, but I know the amount of water I was drinking was bad for me, the doctor said it flushed my system of all good nutrients, diluted my digestive juices, etc. He said the water intoxication should kick in at about 8 litres irc.
The water wasn't brown prior to that, it was just this one time when it was noticeable where it prompted me to switch because I thought they were working on the pipes or whatever, and that's when I noticed the change. Our water is perfectly clear at the moment and tastes great, but I have at some stages gone back to the tap water (you know when it is end of the month salty crack time :D) and honest to god, if I drink that water for about a day and half, my stomach is screwed again.
At the moment I do between 3-4 liters MAX, normally about 2-3. I know it wasn't the amount that made me sick as I continued drinking at my normal pace when I just switched over to bottled water and nothing happened. I don't know how to explain it, but it is as if the "clean" water satisfies my bodies need for water more, but I wouldn't rule out that it is a mind over matter thing. I have a water filter machine at home, but I still use the bottled water and use the machine to make it cold. We have filtered tapes at work.
From a few previous posts, I know people say it agitates them when people pay for water, but as I said I am a compulsive water drinker, and I enjoy a good glass of "as clean as possible" water. I am always scared for those years where they say wars will be fought over water not oil, so I enjoy it while I can hehehe
install a high end filtration system at home :D

So called "super-fruits". FFS, they're just sugar bombs with a few more vitamins in them. They do not cure cancer, make you more appealing to the opposite sex, or make your dick grow larger.
Veganism and vegetarianism - we are human beings - we are omnivores. Source from ethical suppliers if you like, but don't cut out a pivotal source of nutrition for the sake of pretending to care about animals. Your efforts will have no impact at the end of the day. We are, and will for the foreseeable future remain omnivores. No amount of hippie-drum-circling will change that.
Raw food diets - most raw vegetables (which most of these morons only eat) cannot be processed by our bodies in their raw state. Yes, they contain more nutrients, but the human body cannot break many of these down properly, so you just schit it out of your body. You also deprive yourself of the good cholesterol in your system so you are, in fact, incredibly unhealthy. Especially if you ever encounter fat at some point in the remainder of your life. Take off your hemp-beanie, slap yourself across the face and go cook some bacon, you dipschit.
Iced teas - most of them are not teas at all. They simply have tea flavourings added. And they're dosed so full of sugar that the health benefits of tea are negated by all of the problems associated with massive sugar spikes to your system, and overloading your body with sugar. Iced teas are not a health food item.
The bastardisation of the pizza. This is an ever-evolving one, from stuffed crusts, to triple deckers, to putting sauce all over the thing, to dessert pizzas, to pizza rolls and even microwavable pizzas. Fsck you - that's just dough with stuff on. It's about as much a pizza as a raw food diet is healthy.
The fat brigade - you people really tick me off. Fat does not necessarily cause fat. This obsession to strip fat from everything is ridiculous and must be stopped. Many fats are essential to, you know, actually living. Many fats are incredibly good for your cholesterol. Eat the right fats - don't just cut them out. You the public demanded this from producers and now you need to realise that you were imbeciles and start buying foods with healthy fats. Let's bring fat back into our food, for the love of the flavour gods.

They usually add a lecithin like soy lecithin to stabilise a foam, and I'm not a huge fan of it. I'm also not sold on the supposed textural changes in the mouth. I'm not entirely closed to the idea of foams but I'm certainly not sold on them...

I'm not against sharing knowledge, but it is kind of annoying that everyone is posting recipes that could easily be googled. It's not as if the info is top secret. It's readily available. Why clog the forums? If people want to know something, they can ask, but to randomly just post recipes makes no sense to me (unless of course they are genuinely our own and different to the others out there). Where do we draw the line? Is the sub-forum going to have websites full of recipes?
If the other sections followed suit, HW&R would have things like, "How to perform the best bl0wj0b", or "How to know when your lover is cheating". Perhaps Current Affairs would have a, "How to know if your neighbour is racist" and PD, "How to find God". :D

It is overly sweet, over-seasoned, thick gloop with a few dried chillis in for good measure. It sometimes complements the right food, but these days people drench it all over everything. Any deep-fried appetiser is almost guaranteed to be served with bottled, sweet chilli sauce for some reason. Pisses me off.
It's also hardly a decent ingredient in any dish. It is too sweet, not hot enough, and far too full of vinegar to add anything of substance to dishes, unless you're making a basting...

yeah for me the thing is ...i try not to use recipes and try using my taste buds ...
whatever i have made so far is something i saw and adapted to my liking or something i ate ...so using a recipe up to the last ingredient is not for me
thats why i prefer asking and some guys already have a quick tried and tested method

Two that I can recall having had recently
- a component of a dessert. Lasted until the waiter set down the plate. We were trying to figure out what this weird liquid was meant to be afterwards, and only caught on when we read the menu.
- in a drink. This one actually lasted until the drink was finished, but just tasted vaguely of honey and was, well, impossible to drink. I'd rather that they left off the foam and topped up the drink. The drinks menu mentioned egg whites for the foam.
For now, I'll just be avoiding anything that's listed as having some flavoured foam.
