    Default Slap chips?

The salt or vinegar thread got me hungry.

How do you make slap chips at home? The type you buy at the corner cafe in CT wrapped in paper.

Eish, the craving is really bad.

I think that is almost impossible to replicate at home. It is an art .... it has to be *just so* and I still wonder how they get it right!

    For the real slap tjips...

    They use frozen chips.

    Allow to thaw completely.
    Pre-cook for about 5 minutes.

    Allow to cool

    Deep fry in hot oil...
    Drain on paper towel.

If you use "fresh" potatoes, allow them to soak in either water or a water/vinegar mixture before pre-cooking them.

@Helghast: fish 'n chips for about R25 from Neal's. The shop is in Neal Street, Sidwell - right across the road from the big ass Telkom tower. Ask for plenty of salt and vinegar!

When my mom owned a take away/ restaurant years ago, the chips were chopped every morning and kept in a large bucket of water till an order was placed. No frozen chips or par boiling. The trick is giant "chipper" potatoes.
