If your movies are AVIs then they're most likely only stereo sound, unless they are coded to have six separate audio channels. You're more likely to get 5:1 surround with MKVs and MPEG-encoded files that still contain the original audio.
Also it may have something to do with the software you're using to play it and what card you're using. Graphics cards like onboard integrated options and anything from the Geforce 200 and Radeon HD4000 series don't support a number of necessary audio protocols when playing legit high-definition content. Stuff like Dolby HD and DTS-Passthru was only added in a year or two ago and you may find that the software you're using doesn't decode the video and audio properly. Drivers may also play a part and its worth checking that they're up to date.
Its also dependant on your amp and whether Windows detects that it is indeed a 5:1 or 7:1 sound system.
