Are there any, or do they only differ in taste?
It relates to essentially grade, or more specifically the stage at which it is extracted. i.e. First round & then they take whats left and run it through a 2nd process.
You want extra virgin. It might say something along the lines of cold pressed too.
Some of the lower grades are chemically extracted.

Virgin: means no chemical treatment (refined) or blend with chemically treated olive oil allowed. (They treat lower grade oil to get ride of the bad taste). Extra virgin has the best taste and used for salads, etc
Pure on the other hand is usually a blend of refined oil and virgin oil. Refined oils are better for cooking as they keep their taste at higher heats unlike virgin oils.
But as for the health factor, well how you store it is more important than what you are using. You need to keep it away from heat and light else they become rancid.

So what kind of olive oil is best for making popcorn?
Virgin. Definitely not extra-virgin. Once you heat extra-virgin olive oil passed 40C it degrades very quickly and the flavour and composition changes significantly. Never heat extra virgin olive oil. Personally though, I wouldn't use olive oil as imo it is too strong a flavour for popcorn. You want a flavourless oil for popcorn.
Regarding the health factor, there is hardly any difference between the two. Considering the minimal quantities and the marginal differences, the real world health benefits are negligible...
Taste is a personal thing. I wouldn't use olive oil unless I wanted that olive oil taste in my popcorn. If you're doing it for health reasons, then you need to know that there are a ton of other healthy oils that you could use. Canola oil for one performs similarly to olive oil in that it helps reduce LDL cholesterol by acting as a carrier in the blood stream...
When it comes to STD's a virgin should be very healthy.
For popcorn I use a mixture of sunflower oil and butter.

Generally cold pressed will be best!
