    Default I want to make chicken livers tonight.

    I have at my disposal for supper tonight:

    Chicken livers,
    onions,
    carrots,
    potatoes,
    eggs,
    cheese,
    milk that has turned sour,
    strawberry yoghurt,
    orange juice,
    chutney,
    Kellogg's all bran flakes,
    bread,
    Nando's rib marinade,
    ... and brandy,
    and 500ml flat coke.

    and some spices.

    What can I do with these?

    I don't fancy saddling up a horse to go to the shops.

    Fry up a packet of a mushrooms and one large onion, remove from pan, add liver until well browned, add back shrOoms and onion. Pour in a small tub of fresh cream, add spices, salt and pepper, let cook on low heat for 15-20 mins. DONE!

    Best on braai in tinfoil.

    Tomato and onion with salt and pepper is all you need, combine chicken livers and those ingredients.

    Don't offer other people otherwise it'll all dissapear quick sticks

    Dont leave it for too long on fire either.

    Get the chicken livers from woolies, much nicer stuff.
    Soak in milk for a hour or so.

    Fry chopped onion, red/green peppers and whatever else you fancy with seasoning (pepper, cayan pepper, chilli etc).
    Fry livers until brown.
    Chuck everything back together in pan add a bit of hot water and cook until most water evaporates.

    Things you can add at this stage is peri-peri sauce, lemon & herb (ina paarman saches), cream.

    There are many different ways to do this, I just go by taste.

    Left out: Chop up 2 chillis (remove the seeds for a milder dish), add in at frying stage

    Livers contain a lot of iron, so when overcooked, the iron is pushed out of the cells and makes it taste horribly bitter. The texture also goes very mealy.

    Best thing is to cook livers to medium-well - they should still be a little pink inside. I never used to eat the things until I tried it this method. Also soaking in milk can help (sometimes) to remove some of the more potent flavour compounds. I'm in a rush so I'll give you a quickie - har har:

    Flame the livers with brandy (we know you have that in stock - just don't set yourself on fire - the flaming is important - it caramelises the outside and cooks off a fair bit of alcohol)
    Add fried onions.
    Chopped red peppers
    Salt
    Pepper
    Cream cheese
    Toss in some pasta
    Sprinkle with chives and parsley
    Enjoy

    aaahhh so thats why the bitter taste

    so how long must it be cooked if we cant use brandy

    In butter (the small amount is fine and on a high heat the butter browns which adds beautiful flavour) they should take about 3 - 5 minutes depending on how many you're cooking. Best way to check is to slice one open and see for yourself...
