Cut corn tortillas into triangles. Deep fry to make tortilla chips - they taste far better than compressed corn chips.
Mix chopped onion, tomato, red pepper, lime juice, lime zest, garlic, jalapeno, habanero, ancho and coriander. Fry up beef with a seasoning mix made of equal parts onion flakes and chilli powder. Add half garlic flakes, coriander seeds, thyme cumin, salt, sugar and paprika.
Sprinkle cooked beef over nacho chips. Sprinkle grated cheddar cheese - a mature cheese is best. Bake at 200 for a few minutes until the cheese has melted. Sprinkle on chopped spring onion, sliced avocado, and top with the fresh salsa mix you made earlier.
Now those are awesome beef nachos...
