For google to help you out you would probably need a court order.
I would strongly advise against hacking his account. If/should this go to court and they find out you tried to hack his account the tables could be turned and you will be in for the high jump.
Press charges and let the cops so their stuff. (Hopefully they will do something about it!)

His record at SAPS includes theft and assault and he is still within a 5 year suspension period but it seems that SAPS are not interested and he has not even been questioned regarding this particular assault.
At this stage nothing seems to be happening and, on my advice, she went back to the station and "threw her toys out of the cot" but only received vague responses.

Let her go to another station and file a charge against those police officers for failing in their "duty to protect" and for violating the terms of her interdict (in that they allowed the guy to act against her and have taken no steps to stop him).
The intrdict could possibly be used regarding the hacking of her personal email. Confirm it with a higher ranking cop.
If it is covered then report/lay charge and get him taken in. This is probably a criminal matter an not a civil one, meaning she would not need a lawyer, the law/cops will do all that. As long as she does not withdraw the charges he is likely to suffer at least a bit.
OP rather keep your hands/actions clean. Support her and do research so you can help her with the info she requires. Most importantly be there for her, she will probably have to look at his turd-face in court....
Do not give him any excuse to file counter charges.
If the order does not cover that then lay a new charge of the hack. That charge will probably instruct the ISP to say it was him who had that IP then and give him a kick with that too..
In the meantime she must not log onto gmail often as the length of the logi list is not that long and can result in the evdence moving "off-screen"..
As far as I know, just the hacking on its own is pretty illegal. The police need to subpoena the ISP to get the details of the IP address at the specific time it was used to access her account unlawfully to prove it was him, If I'm not mistaken. Lay everything on him. If you have the financial means, you could maybe hire a lawyer as well, that will help you immensely.
I think using the work "hacker" is a long shot.
Its possible that he guessed or knew her password.
IF you can prove that he would have known something like that then that is still him breaching the restraining order.
