I'm not sure how to get detailed logging going, I need to log every site users visit from the LAN.

Using RAS + NAT by the way...
 
Just wanna understand you a bit better...

You are using routing and remote access, RAS and NAT and you want to be able to log user activity down to a web site (http) level? These essentially form part of VPN services.

With the above it is going to be very difficult, a proxy (ISA, Squid, etc) will serve you're purpose a lot better.
Then you just enforce all people through the proxy and log the details this way.
You can even do http auth on the proxy to see where each user is browsing without having to tracing IP's in the event you don't do DHCP reservation.
 
gotcha, that's what we used to do, but had lots of problems with specific ports being required by various applications on the network. I'm familiar with this setup and am a bit hesitant to implement ISA (very complicated) and Squid as I don't know them well. I know RAS can log to a SQL db (I can use the WSUS one on the same server) - perhaps there is a way to get more info from it that way. Will mess around a bit more, any other advise however is most welcome.
