Move to VMware + Veeam ;-)

BackupAssist is pretty decent for Hyper-V backups (they all use VSS...)
Backup to external USB3 drives (daily / weekly x4 / monthly x2)
If the host dies you can even spin up the vm's directly from external from another host (wont be fast and for emergency only ofcourse)

Ideally you want some decent redundant and replicated storage (eg EMC) for the VM's to live on.

Running a trial of Altaro at present in a lab, so far so good.

Aiming for weekly full and daily incremental to rotated USB disks, like above post Replication to 2nd Hyper-V host as well.... glorified PC in this instance.

Would have preferred Veeam but the client budget (they're a school) doesn't stretch that far and Altaro have offered 15% discount, and the school pays R2.3k for Windows Server licence with Hyper-V role only, allowing two Windows Server guests.

Veeam
Daily/Weekly/Monthly snapshots to disk
Then replicate snapshots to another site or in our case write to tapes every day
