Bringing money from the EU to SA?

As in some threads I have already posted, and maybe getting annoying by now haha, but I am going to be working in Germany for 15 days, now I will be making an estimated 2000-3000 euros, this will all be cash, is there any procedures I have to go through? or do I just stash it in my pocket and walk on by.

Also do I have to declare this money in SA?

You're allowed to carry in as much as you like in foreign banknotes as long as you declare it.

Why not rather just deposit it into the equivalent of a forex debit card over there, and just swipe it here or withdraw from an ATM...?

Just transfer it. Couldn't be easier.
Or, as it's such a small sum, you could just bring it back cash. Just declare it

You have to declare it, it's only when you're out of the country for longer than 180 days at a stretch that the country you fall under the tax laws of the country you're residing in.

You can just lie and say it's spending money you came back with, because 15 days and 3000 Euros isn't a lot and can easily fit in under the "gift" category IF you have to define it and they won't accept the travel allowance thing
