Having switched over to fiber the one ethernet jack on my router is now being used for the WAN connection to the openserve ONT, leaving me with just 3 jacks.

What is the easiest way to expand this? Can I simply plug an 8 port switch into the router and the plug all the cables into the switch? Will the router's DHCP still be able to do its thing etc?

Yes, correct. It's that easy! Make it a Gigabit switch!

Doesnt the router have a seperate ethernet port (usually yellow) to plug your cat5 cable into for the ONT, still leaving you with 4 ethernet jacks?

nope, It's an Asus that I used as an ADSL router initially, which can be configure to use one of the jacks for WAN.
