Let me tell you ... it's addictively delicious. I'm drinking the soup like I do brandy and coke .... in copious quantities.

I think the key is a good mirepoix. I must confess I have until recently not been a huge fan of celery. It has just too sharp and pungent of a taste ... but if properly cooked (and cooked long enough) it gives a depth of flavour to the soup that really justifies its presence.

So the recipe is: A finely chopped mirepoix, finely sliced mushrooms, a Knorr stock pot, 8 chicken portions and a cup of cream ... and of course lots of water. Seasoning goes of course without saying. I have 2 liters of frozen beef tongue stock taking up space in my freezer ... but like a fool I forgot about it.

I used my trusty electric pressure cooker ...

... and I put it all together Thursday morning at 3:30 - 4:30 AM

Because I couldn't sleep.

... but I reboiled it again just now to add to cream.

When you need to use your word of the day before 21:00. Would kind of be useful if you told us what you did?

Edit: And you still don't mention the good mirepoix recipe. Bruh....

My original post is ... was a work in progress. Has been heavily edited.

Mirapoix is of course simply: Finely chopped onions, carrots and celery.
