All the other christian rugby players in Australia manage not to fall foul of this, why is he the only one?
Pretty simple. Some people eat meat, others don't. Some wants milkshake with their fries, other don't. Because he decides to follow a religious practice in his way and according to scripture he is now wrong because others don't? Fark me, you sound a like Vegan attacking Meat eaters
As for him being employed as a rugby player, part of that includes doing certain things for sponsors.
Yes, like wearing their clothing for endorsements, attending functions and the likes. Which he does. If the sponsors don't want him to do these things they can remove his endorsement deals. Got fark all to do with the Rugby Union he's playing for.
If you are at odds with what a sponsor says and does and state is publicly then you will have problems. He is selected as a representative of Australian rugby, he wears their colours and their sponsors on his Wallaby jersey, of course he is required to be a role model and that is why there is a social media section in his contract.

Contrast this with Hashim Amla and Castle Lager, he made it clear that consumption of alcohol was against his religion and the they worked out a deal where he didn't have to wear the branding. What he didn't do was go on social media and say that all of the other members of his team where going to hell for supporting a beer company.
Perfect example.
Amla playing for the Proteas but not endorsing their sponsors. Yet, no problem, I mean it's his religious right to not wear branding endorsing Alcohol. So now if the Sponsor in this example was to go: O hell no! would the Proteas/CSA drop him because of it?
