So, I am about to put a JB rom on my 10.1.

Problem is, how do I get all my Samsung Apps that I use, Polaris Office and the video player.

Before anyone asks, I use the video player as it is able to lock using the hardware key so my baby can touch the screen without interfering with the video. Havent seen this on any other video player.

Has anyone got a package for the Sammy apps or know of any alternates to the apps above...

If you have root you could just use titanium backup and then restore them after the upgrade.

If you don't, you could look around on the play store for "app backup" apps. Chances are there will be one that doesn't need root.

Is this an official release of Jelly Bean 10.1 or are these those cooked versions that require rooting (like the ones from XDA Developers)?

lol ICS has only been officially released for Italy so far.
There is a CM10 Jelly bean which is apparently very good for the P7500.(camera not working though)
You wont get your samsung built in apps back.

A very nice player that plays whathaveyou videos and has lock screen, is MXPlayer. I bought Pro to get rid of ads when you pause, but free version is brilliant as well. Ads do pop up if you're paused, but go away on resume

Doesn't XDA have links to the samsung apps?

Running JB on the Flyer and loving it.
