Jim Beam, Jack Daniels and the likes thereof....

Just watched a documentary on the process on how they make Jim Beam. I recall watching a similar documentary on the workings over at the Jack Daniels distillery....it all looked quaint and rustic, just like in the old days.... And there is always some worker in the distillery that was related to Jim Beam or Jack Daniels..... The offspring looks likenthey just walked of the plantation.... We get told what a multi million dollar business this is.... How many hecto litres they distill, etc, etc... All from this old distilery....

This in turn got me thinking.... With the global demand so high for their product, do you think that they really do still produce their entire yearly production in old aged casks or is there a modern chemical factory behind the shed mass producing the moonshine...

Whats your take....

Factories can still use old techniques, which I am quite sure Jack's and the likes do...

I'm with DJ on this one. People would quickly realise a difference in the taste if they suddenly started changing the process.

The Scotch distilleries like Glenfiddich still use the old process, can't see why they couldn't do it with Bourbon as well.

I am from the Jim Bean and Maker's Mark area in Kentucky and they still produce bourbon with the old process. Both of their warehouse properties are HUGE (not to mention the warehouses themselves are HUGE and go for several levels) and all the bourbon is stored and aged in barrels.

I never drink Jim Bean ewwww! Wild Turkey or Woodford Reserve (if you can get here) are wonderful.

Not only is jack still aged in charred oak barrels they still hand manufacture every single barrel. These barrels are also only used once if I recall and sold to smaller distilleries and the like.

Like Tabasco, who age their chilli sauce in old Jack barrels...
