I need to start a new batch of pineapple brew for the weekend but the only ones I could find are still a bit green. Do I use them or do we do sober Saturday?
You're talking about next weekend right, not the one starting tomorrow?

My last batch was potent after about two days, was hoping for a Sunday dop at least. Either way, how ripe do they need to be?
They don't. The yeast is mainly feeding off the sugar you add.

I think we have two different opinions on "potent".

No chance of getting drunk this weekend if you plan on only starting today on Thursday.
I was hoping to bottle today or tomorrow but this airlock is still going 110%.

My brew sits in my lounge and i can hear the bubbling in bed from my bedroom next door

I've got 5l of cranberry grape I started on the 30th that might be ready to bottle tomorrow, fingers crossed.

That's why I built the box. It keeps things at around 26-27°. Storage is limited though

You need about 4 or 5 of the 5 litre containers, making a batch every second day.
This will give you about 2 litres of jungle juice a day since you only get about 4 litres into a container after adding all the secret herbs and spices to the mix.
