I've brewed well over 100L since the lockdown started. I refined my process last night with a R4 gland from builders and fish tank tubing from the pet shop at R3 a metre to create a simple home made airlock.

Ensures my bottle never explodes, no need for burping and no unnecessary air gets into the brew container. I've made a short video of what it looks like for you:

thats for the fermenting stage
what about bottling stage ?
Just keep it in the fridge.

Next step I want to buy a plastic tap, Mica have them for R38 and add that to the fermentation bottle so I can siphon the beer from the tap through a sieve or cheesecloth into my bottling containers or another big container like the fermentation container with its own tap as well for dispensing into drinking glass.

Into that bottle I can just put a gland on the lid as well with a small piece of tubing that just keeps the pressure down.

Botteled my ginger beer cola last night.. Has a strange taste almost like flat off coke with a hint of lemon juice and ginger, not good at all. Might be the recipe or my brew might have been infected. Luckily my peer cider should be ready tomorrow and looking pretty good so far.

The bottle conditioning should sort out the flatness and improve the taste.

Don't give up on it until its cold and carbonated. Lots of drinks taste weird warm and flat.

So this is Day 7. Should I leave it longer....?

Have a sampler, it does not have to ferment to completion, as that will make it dry and/or sour.
If it still has sweetness, very likely it can brew further. For enjoyment, if it tastes good, it is fine.
For getting pissed, if that taster glass did nothing, it needs longer.
