as far as i know, citric acid as a preservative is fine and wont affect your fermentation

I was able to secure the syrup from a large pineapple tin, wife used the pineapple pieces. It fermented with no problem whatsoever. It will be my go to if pineapples become unavailable.

Supposedly it gives you a more pronounced pineapple flavour but I use chunks and have no problem discerning the taste of the pineapple.

Oi I blend mine, much better taste as you actually get pineapple juice I blend as far is it will blend down, then on the 4th day I strain it add apple juice 20 percent per bottle for second ferment leave outside for 6 hours capped then pop in fridge overnight to enjoy the next day super yummy and kicks as well

Not to mention the more you blend it, the more contact you give the yeast on the pieces of fruit, so you're bound to get better fermentation. I wouldn't blend to a complete pulp, but pretty fine isn't a bad idea.

i didnt blend mine, just cut them all up loosely
i dont think it makes much difference anyways, smaller pieces makes more sense to me
