Regarding the cloth cover. How about drilling two small holes in the lid to allow for escaping air?
I would do very small holes. Where I am, there are a lot of insects around that like to crawl into sweet stuff. A cloth for me works fine.

Any thoughts on how well these would work? Seems so much simpler and easier than making proper airlocks fit on a bottle.

for my pineapple beers all i do is not screw the cap on all the way, so that the brew can 'burp'
you want it to let air out and not in

not rocket science, its just home brew until we are allowed back into the liquor store

Then you're stuck with lids with holes in them.

Just don't tighten the lid.

And it's CO2 that's escaping.

Just buy balloons, 2 or 3 pricks and you're done
