Since cultivating yeast in my sugar washes and reusing it has been working so well tomorrow I'm going to start trying to get some wild yeast off lemons, apples and from the garden but more as an experiment than anything else. I've found that the yeast from 10l cold crash is enough to get around 15l fermenting happily in around 5 hours (takes around 90 minutes with dry brewers yeast).

Do you do a yeast starter with the reused yeast?
Also be carful of bacteria and mold when harvesting from outside. Best to do a few small fermentations to build up a good yeast profile and make sure there's no mold in your natural starter before doing a bigger batch.

No I just store in the fridge and replace the water in the jar twice. When it comes time to reuse I take the jar out of the fridge and get it exactly to the temp of my wash before adding it to the wash.

I divide it out then pour it into the wash gently and that's it.

I'm lucky in that we have extremely clean borehole water but I sterilise bottles and water a day before I need it anyway just in case.


Yea I'll be running the wild yeast in slightly acidic sugar water and cold crashing / replacing the water several times before I try it, then just dump it in 5l of sugar water and see how it goes

Sounds like you're having fun.
If you take it out of the fridge the night before and feed it some sugar water it will be much quicker to get going on brew day so give that a try when you have a chance.

I've had a lot off success with getting yeast off my lemon and orange tree with the lemon yeast seemingly being the most efficient. I also have a bread starter thats been going since 2016 that I got from my fruit trees. I normally slice bits of skin around the stem area and use them whole to get a yeast starter going.

I'll give it a go next time round, have a lemon tree and a peach tree (but it is permanently in the shadow of a jacaranda so the fruit never ripen). I also have a pear tree with the same issue. Anyway, I'll give them all a go and see what takes :)

As a test, I am making a 5 litre sugar wash batch.
By adding a flavour concentrate per glass, I should have anything I want. It might dilute the alcohol percentage by half a percentage, but then it simply means that I can have another glass full. :p
