As a newbie to this brewing, is this "foam" normal or has the brew gone bad? Is it part of the fermenting process? It's my first batch that I started on Friday evening.

That's normal. The yeast reacts with the sugar (fermentation process) and releases CO2 gas (same as in a coke). The bubbles are the CO2 rising to the surface.

When the bubbles stop, fermentation is complete and you have pineapple "beer".

Hi all so made a batch of the Hunters cider, today is the 7th day so it's time to bottle. I have 2lt coke bottles I will be using. Can you give me some advise in terms of best way to bottle it, how much sugar should I add to the bottle, should I cap them straight away and do I need to strain the brew? My first brew so still a bit wet behind the ears here.

hmmm, I normally don't bother with bottles. Just drink it like that, if you need to burp just remember to wear a mask.

what i do with my chilled bottles is open as fast as I can pour out a glass and cap it if you do this quickly itdoesnt fizz over etc
lucky you
if i open mine quickly over half spills out the bottle about 20cm in the air
i will use half a teaspoon sugar per litre next time

Last night I started a batch with the fruit juice recipe but it doesn't have any bubbling. I can just hear a faint fizzing sound. Normal or not ?

That means your brew isn't fermented to completion, or you have an infection. It's called a "gusher". Half a teaspoon of sugar is the perfect amount to carbonate about 450ml of brew at a time. If yours is gushing like that, you can bottle without any sugar added as it means there is still some left in the brew and it'll carbonate anyway.

Are you teaching youngsters how to brew ?

Teaching myself first and then the youngsters :p

i put 1 teaspoon sugar into my 1 litre PET bottles for CO2 stage
i screwed the lids on tightly and monitored them closely
i did uncap them about twice a day for first 2 days to 'burp' them
just gently squeeze the bottles to see how hard they are
they shouldn't be rock hard

when opening them now i have to gently open the cap and let it fizz for about 2 minutes before i can take the cap off else it bubbles out like a shaken champagne bottle, but its worth it, every bottle i pour now has tons of fizz

entirely up to you
i bottle straiht from the bucket
other people prefer straining it first
