If a device is Matter compatible, does it mean it can be used in its own app and other locations at the same time?

In other words, will I see it in the Sonoff app? And whether I use Alexa, Google or Siri - they can all control it at the same time?

Yes, that is the intention of the Matter standard. So you should be able to additionally pair the device with your hub (if Matter compliant). Though for some devices with more advanced features (e.g. coloured lighting) not all the capabilities are available via the Matter interface, so one sometimes still needs to use the manufacturers app (e.g. to change the colour) - but this should hopefully improve in time as Matter gains momentum.
