Monitoring email

The company my daughter is employed by is in financial difficulties and she has been told that she must work to 11th March and then will be retrenched with the normal one week pay for one year worked.
Last night she did a favour for a co-worker and sent his CV to an acquaintance, who is not connected as a customer to her company, Unfortunately she sent it using ‘smtp.thecompanyname.co.za’ which is the default email setting on her iPad.
My first question is – can all emails sent using this address be intercepted or monitored by the company?
My second is – could monitoring this email be used in a disciplinary hearing against her.
When she went to work she was immediately suspended and issued with a warning for a disciplinary hearing for misconduct.
To me it looks very much as though the company is attempting to avoid the retrenchment payout.

That sucks, what is so wrong about sending an innocent mail on behalf of a coworker? Time for CCMA.

I think I'm missing something here - what's wrong with sending someone's CV out?
