Meat (I prefer short rib). Brown it and take it out.
Brown
onion
Put meat back
Add
veggies as layer on top of meat
Layer with halved baby
potatoes
Mix 250ml
winewith
tomato paste, thyme (1tsp) and rosemary (1tsp) and pour that into pot (Robertson spice bottles)
Can add beef stock if you need more liquid
Close lid, low heat, you should hear a bubble pop every second or so
Don't. ****ing. Touch. It.
No stirring, leave it.
2.5 to 3 hours later you are done.
Easiest is over a gas flame

*During lockdown wine had become scarce so I substituted it for rooibos tea. I substituted both the wine and beef stock for 400ml (4x bags) of tea before adding tomato paste etc. Was very good.
