Just because you (fanie) have this stirring addiction when making potjie doesn't entitle you to come and cast aspersions on people who clearly know what they are doing.
The shark already explained it clearly. The only layering involved in curries is that of flavors.

I usually add a bit of curry or chilli powder to a potjie, as well as a packet of brown onion soup just to make the gravy thicker

Jip watched most of it, a big fan of Justin Bonello. Not so much his TV presenting, but he has some amazing open fire recipes.
