Ok so if you follow the pitmasters like Aaron Franklin he says understand your pit and your meat, once you you keep things low and slow you can check temps with an instant read thermometer every few hours and not need to watch it with those probes all over the place.
I got a meat stick and when it didnt work returned it and its been great ever since, I dont over think things any more just give yourself lots of time and keep things low, start early and have time on yourside.
