After you take it off the heat the residual heat keeps the meat warm for a while.

Also the resting container can be kept warm but below a temp where the meat will cook further....hense the aluminium pots sitting near the fire with meat resting inside.

Thats why you should braai steak on a super hot surface/coals

the meat stays warm for long while resting
