What I found here is that, and yes I need to plan it better, family owned, well run butcheries close at 1300 on a Saturday so it catches you off guard although the meat and selection is 100 times better

SO bought those bulk chicken bags from Woolies in the week.. when we opened the bag it smelled like wet dog.. the weirdest af reuk in my lewe.. their QA has been in the shitter for at least the last 2 years and steadily declining

All the smoked meats freeze great - just portion them into 300g portions freeze them then hook them out for pizza, tacos, nachos, pasta etc.

Problem with a smoker this size is that doing 1 or 12 brisket same amount of wood is used.
