Butcher was out of ribeye, so I tried a 'stewing cut' and it was a total fail. I cooked it in the sous vide at 57C, and by the time it came out it had released all moisture. Not even garlic butter and chimichurri could save it

Picanha and lamb chops were on point though, served with chimichurri and garlic bread.
