I think the reason was that Ferrari wouldn't let anyone else do the hot lap in the FXX, it has been rumored for some time that the Stig is more than one person, perhaps the manufacturers send their own test drivers along and using the Stig disguise makes it easy to use multiple people.

Half the fun lies in the fact that nobody knows who the stig is

One could see that the Stig has black hair in a few clips which means it is also longer than what MS wears his hair. Also the posture does not add up.

The most obvious thing is White Stig was already well in place while MS was still racing F1, never mind being advisor to Ferrari. There is no ways MS would have had the time to do F1 & Top Gear, impossible
