So I kinda have a problem with Telkom Mobile and its making my life difficult right now.... It might be more of a iphone problem but lets see.

I have the internet staterpack with sim sonke prepaid in my iphone 5.

Now I have Telkom mobile coverage at me home and there is coverage at my work in another town. There is no coverage between the 2 places though.

What happens is it switches over to MTN fine when I have no coverage but I have noticed that it tends to want to stay on the MTN network even if I move back to a Telkom Mobile covered area.... I then have to manually select TM from the network search.

I also can't force it to stay on TM cause then I will have no coverage when I travel or TM doesn't have coverage. If I leave it on automatic it tends to want to stay on MTN when I go out of TM coverage and that is also a problem cause most of my data is TM data I don't have lots of All network dat. It would not be very affordable to just buy a lot of all network bundle then I might as well just stick with one of the bigger operators.

Mine stays on MTN but then switches after about 5 mins or so...
I'm using a Nexus 4; maybe it's something to do with the iPhone?

On iPhone 4 (iOS6.x) there is an option to enable/disable data roaming. Not sure it is local or international, but you can try: Settings -> General -> Cellular -> Data Roaming.
Enable only when you want to use all network bundle. When disabled it should help with fater switching back to TM network.

What you are doing is Settings -> Carrier. Leave it on 'Automatic' to keep voice communication all the time. Also disable LTE on iPhone 5s, currently Apple it doesn't allow LTE on Telkom Mobile network.
