Hope this works...

Since installing CM11 every time I reboot I get a message saying please wait and then this error pops up. I press OK and then everything is fine. Anybody else seen this?

Which one did you install? I have the latest nightly build and it works fine bar a few crashes today.

Thats the incremental update from the one click installer. Havent had any crashes yet. If it starts to make trouble I'll flash the latest stable community build (M9 I think).

Whats the easiest way to update the OS and keep all your settings and apps? Do you make a backup of your apps and just restore them? Can you do it with your settings?

I want to switch to the community builds but I don't want to set up my phone every time...

This is exactly why I stopped using CM nightlies. It is great if you get a nightly that works flawlessly, but I got fed up some time ago where every single nightly on my N7 caused problems. So on my other devices I am on stock, but my previously owned S2 left my hands with NeatRom light and it runs like a Swiss watch. It has a lot of features - similar to stock fw (it is based on stock), but without the bloatware. And with the Aroma installer, you can actually choose what bloatware/apps you want in the rom. If you don't like the UI, most launchers can fix the problem.

There are lots of more stable options than cm nightlies. Just have a look the XDA forum

what would be the best micro SD memory card for this device?

Get yourself a Class 4 32GB card from Sandisk.

Don't bother with an ultra high speed card, as the S2 can't make use of the extra speed.

Now that my S2 sits in my drawer I've been testing standby times.

With CM11 I'm getting some nice standby, I do have apps that wake the device for notifications (E.g. FB, Twitter, Tapatalk, ect.)

4 days is not bad though :)

^wow that's good, and how old is the battery? and is it the standard one.

my S2 is currently being sported by my daughter, can't wait that I upgrade, so the hand me downs can flow through and I can get my S2 back for experimentation. Currently running latest RR

Making a list on Amazon for my phone because I want to get the 32GB micro sd card and a cover/case and maybe a bigger capacity battery. Does a bigger capacity battery mean the size is bigger because the 3800 battery shows a back case with a wider compartment? Adding another extended back means a case will not fit.

Correct. If the physical size of the battery increases then the case will be a problem.

You do get extended batteries built into a cover, that makes the whole phone thicker and gives about double the capacity.

I was looking on Amazon for a bigger capacity case but those they have are black and don't look nice at all. I would have loved a battery door that took a bigger battery but still suited the rest of the phone. I am still looking though.
