jailbreak... duhhh
as long as you don't install stupid beta apps or apps that mess around with system files too much (system preferences etc etc) then you'll be fine. i tend to stay away from those types of apps.
jailbreak with blackra1n rc3. will take 30 seconds. no need to restore or anything like that. backup the phone in iTunes before hand just in case though. after you have jailbroken, install Cydia via blackra1n app installed on the phone. (do NOT install Rock unless you fancy constant restores)
some necessities after you jailbreak which you can download with Cydia:
-sbSettings (convinent switches for various things e.g. 3g,wifi,bluetooth on/off, brightness control etc, all from within any app. swipe status bar on top right->left or vice versa to bring up the menu)
-iPhoneDelivery (sms delivery reports)
- 5 icon dock (self explanatory if you want an extra icon in the dock)
- rotation inhibitor (for use with sbsettings. allows you to disable rotation for when you are laying in bed and want to browse the net/mxit etc)
- winterboard (themes for the phone. i would personally only install this on 3gs as it has enough memory for this. <3gs an the phone is going to lag pretty badly.)
- appsync 3.1 +install0us (from the hackulo cydia repo. to install 'modified' appstore .ipa's [apps] available from sites such as apptrackr.org)
- skype (free from appstore) + 3g unrestrictor (from cydia - allows you to use skype over 3g)
-shazam (free from appstore - identifies a song playing on a pc/raidio etc by listening to it)
- categories (place apps/games etc in categories to neaten up your springboard) + categoriesSB (which speedends up the opening time of each category folder)

RE your contacts - what are they stored on at the moment? if you can transfer them to your SIM card (64k SIM would take more contacts than 32K) then you can transfer them batch by batch from your old phone to the iPhone. there is an import sim contacts feature in the iPhone settings (mail, contacts section).
alternatively, you can import the contacts into outlook/windows addess book if your previous phone supports this, and then sync your iPhone with outlook/windows address book
