I assume they want the one pages since that's a standard CV and it real life I don't see that happening since the places I work for and am involved with won't even fit on 1 paper printed front and back.

This is a somewhat interesting topic as I understand that a lot of CV filtering these days is done by software. Which means that if the software has difficulty reading your CV, you might lose out on opportunities.
