Apparently they cannot find the marriage register on the system and therefore i need to either find the priest who married us 8years ago (who unfortunetly has passed away 2 years ago) and get a copy from him or we need to get remarried at home affairs.

Get married at home affairs. You just need rings and a witness. Done it with first marriage

getting married at home affairs in Cape Town you going to wait up to 4 months.
he has been married for 8 years, 4 months should probably not make too much difference in terms of time?
