Can't they use the details to make payments or something??
Many companies have their banking details on invoices or statements to facilitate EFT payments of outstanding amounts. AFAIK it has never been a problem.

Then why is it dangerous to give a scammer your details?

It's not really. They need to ask so that you think you're going to get paid. Although if they get your ID documents along with it maybe they'll try some identity fraud.
They then make up some BS that they need you to transfer some money to them first, saying it's to release the money or to cover transfer fees or something.
