Do you have a favourite dish you enjoy making?

I recently decided to once and for all conquer the whole roast chicken,
to cook it to succulent perfection, to never again have it overcooked or dry.

It worked, I now understand, after you dryrub it with your spices and herbs,
and putting a bit of liquid in the roasting tray,
you cover that tasty little free range chicken with a tinfoil tent !

Then you roast it.
Or, you stick a half-full can of beer up its butt and roast it in an upright position! :)

Edit: Ok... maybe it doesn't apply to an electric oven, but it works nicely in a gas oven or kettle braai.

Nice concept, or filled 3/4 with Chardonnay, thyme and some crushed whole coriander seeds.

After my mother passed away (god bless her soul) when I was about sixteen, being European (woman of the house cooks), my father and myself knew as much about cooking as Jacob Zuma does about safe sex, my brothers were also 13, and 7 at the time. We battled, every time my poor dad attempted to cook it turned out disastrous (boiled cabbage & polony, etc)!

I decided to learn, I've hung out a LOT in restaurants in my time, always had friends who owned restaurants, etc. Mostly it's self-taught though. I also realized that it's a major babe magnet when a guy knows how to cook, inspired me immensely. :D

I love food, eating out, cooking at home, everything. It's a big part of my life for sure. I'm a true continental. (living in New York a lot doesn't help either, I'm addicted to steak!)

Hahaha!! I find this thread amusing! Some good answers! ;)

Desperation.

Lol....same here! After I completed my studies I did my 2-year UK working holiday service and was left to figure out that cooking thing on my own.

Needless to say I can cook now...

Lol mila. You sound like a 5 star chef. Ask for a job at Michaelangelo in Sandton and you'll get it, no doubt! ;-)

Cook a flattie...on the fire...in the bag. Nice going! You project the mental picture of this very flustered chef trying to bat out a fire on the stove while the microwave is combusting due to the tin foil in it.
