Nothing wrong with setting up your own server, just keep in mind that you become responsible for the upkeep thereof. We've converted a number of customers from traditional on-premise PBX to hosted PBX services. All they need is phones and connectivity and we look after the rest. -

Best handset and call solution for single user speaker phone calls

For that you either need to roll your own PBX or a hosted PBX. PBX registers with VoIP provider and all the phones register to the PBX with their own extensions which you put into a ring group. Depending on your enthusiasm levels you can give FreePBX ISO a go: https://www.freepbx.org/downloads/ -
