All you need is decent bread and of course clean utensils. I always use a separate knife for the fish paste.

It only goes mouldy for three reasons:

1. You don't eat it fast enough.
2. You stick a dirty knife/ spoon into the bottle.
3. The fridge temperature setting is not cold enough.

Of course! All really good foodstuffs are alive just before you consume them.
Besides fermentation is a continuous process - it does not stop when it is bottled.

We had a few big bottles of Pecks that we still ate. Then there was one left and one of the kids opened it for a sarmie, did not tell anyone and we only saw the almost full opened bottle two weeks later at the back of the fridge

Those little jars go nowhere. Or should I say 'went' nowhere.

It's not like marmite where you spread on a miniscule amount. You're meant to cake it over the melted butter. Heavily.
