Is there any way to tell epic games not to try and install a game on my precious but limited ssd? All I can see is big buttons that don't give me any options.

Yes, when you click "Install" it asks you, "Choose install location", "Browse". It also gives the "Options" to select what precisely (e.g. language pack, DLC, extras, etc.) to install.

Yes, the Epic launcher doesn't allow to move games at this stage and yes, it is bad, even Origin supports it.
