I was just thinking the same, Just get Remote Control Add-on and VNC viewer and you should be sorted, but then I saw the end user its targeted for will need something simpler.
Pity Airdroid only allows you to send SMS's and not use the dialer as it would have been a perfect platform for this.
Another VNC server app for other people looking at this is https://play.google.com/store/apps/details?id=org.onaips.vnc but it uses ad's so good for short term, not good for something you want to run 24/7.
