it all depends.
Outlook only backs-up when you tell it too, or if you archive the mails, but afaik if you delete it in outlook its gone.
Your problem however comes in at a server level. If you are using your work email, they might keep archives of all correspondence for a certain amount of time.
At the company where I worked I was able to retrieve all mail (sent and recieved) from my account for 3 months when the HDD died.
If its a private address, then you should have no real worries.
