I havent played it but I have seen it running.. Far Cry 2 looks awesome. Its just something about the textures that does it for me. Also, Mirror's Edge looks visually stimulating!!

Mirror's Edge looks nice and all (I dl'ed the demo), but there certainly are games out there with better graphics. As Fudzy said, Ace Combat 6 looks damn impressive - my wife even remarked that the intro to some missions almost look like live footage captured on film!

Give Bioshock a go as well - even though it's fairly old, the artistic style of the game is (imho) still unmatched on the XBOX. The water effects also look deliciously liquid.
