You must not have updated very often! New versions of the kernel are added to the boot menu. There have been maybe 4 kernel updates in 3 months.
If the new kernels work fine for you, you can delete the old ones via your favourite package manager - e.g. to remove kernel 2.6.31-14, look for all packages with 2.6.31-14 in the name and remove them. Then they won't appear on the boot menu ... and you save 60MB of disk space or whatever.
