Got some extra lean mince...you got recipes(healthy-im on a diet)? Always seem to have the problem with them falling apart.
 
add some breadcrumbs, egg, fry up some onion and mix together with 20% pork (from pork sausages of minced pork if you can find it).
sorry, but burger patties and healthy diet don't really go together.
a better bet would be spagbol with wholewheat pasta, or burritos with guacamole, tomato relish, woolies wholegrain mini wraps and minimal mozzarella.

Ok stuff the health then me want burger :D Maybe ill try that :)
 
Just made some huge patties for the braai :D

1KG Beef Mince
500g Ostrich Mince
1/2 Onion finely grated
2 tbsp crushed garlic
1 tsp dijon mustard
2 tbsp tomato sauce
sprinkle of steak and chops spice
a bit of thyme, rosemary, parsley and dried chilli flakes
salt and pepper

Needless to say there is no bun involved as it would just look silly
 
ooh homemade patties are the bomb, they always end up bigger than the ones out of the shop.

Requirement: Cast iron griddle pan. Put stove plate on max and let pan heat up for 5-10min, it will start smoking. Don't add any oil/butter.

Take 125g (or you can go bigger) of mince and shape it in to a patty. (Minced rump would be nice with about 20% minced pork but optional.)
Sprinkle olive oil over it wipe to cover surface.
Ground black pepper & salt onto the patty, oil keeps it in place.
Place patty on griddle, it's going to smoke like hell and blacken the pepper but adds loads of smokey flavour.
While the oil/pepper/salt side is down oil the top and add salt/pepper.
Turn the patty.

Cooking duration depends on how you like it, you will see blood pooling at the top after a short while. Don't turn the patty more than 4 times.

This is the best patty I have ever tasted (I tried it the same why I do my rump steak). No screwing around with bread crumbs, egg, spices and all that schit. Pure meat baby! (It does not break apart at all once on the griddle)

For toppings I do caramilsed onions in butter & a roux based chedder cheese sauce or cheese/mushroom sauce. Also use fresh tomatoes, crunchy lettuce & gherkins. Adding tomato sauce from a bottle is sacrilege ;)

PS. That griddle pan is going to be pretty caked with burnt stuff. As you take the patties off the griddle run the hot water tap until the water is hot and simply place the hot pan under the running water, it will steam like crazy but most of the stuff will come off straight aways followed by a quick wipe with scotchbrite pad or goldilocks scourer.

I've highlighted the reason why they're always falling apart. Use regular mince or lean in a pinch. Fat flavours it and holds it together.

A hamburger patty should consist of mince and maybe some light seasoning (ie salt and pepper) and nothing else. No breadcrumbs, no egg and certainly no onion!

BTW - pickled cucumbers. . . 99% of what are available in the shops here are rubbish - if you live near the NY Bagel shop in Sea Point you won't find a better pickle in SA ;)

I think there are more and more people making their own burgers these days. In the last year i sold 3 hamburger patty makers of various kinds and I sometimes see other people looking for them too.

I've yet to come across a machine that doesn't over-compress the meat.

Edit: Anybody see that one episode where Heston Blumenthal makes the perfect burger? The way he did the patties was excellent but requires a meat grinder which most people don't have. His patties are also just pure meat with a bit of salt&pepper I think.

But it's so easy to make a patty with your hands anyway :confused:

I know cause Jenny makes them for us sometimes but I reckon other people want it to look good and maybe don't want their fingers dirty or whatever so they want one of these presses.

I'm pretty particular when it comes to a decent hamburger. :D
 
Put the patties in the fridge for an hour, that helps keep the together.
If you want a bland flavourless burger, use an American recipe.

Probably mixed with lard and deep fried :D

You should watch Diners,drive ins and dives on channel 185....then you will see why Americans are well...pretty chubby lol.
