This is a cheat's pizza that takes all of 10 minutes to prep and cook, that can be done on a flat sandwich toaster in the office or at home, or in the oven.

Ingredients:

Flour tortillas
Tomato paste sachet
Mozzarella cheese
Salt
Dried origanum or dried Italian herbs

Method:

Spread one tablespoon of tomato paste thinly on each flour tortilla
Top with cheese
Sprinkle some dried herbs on the top
Season with salt

Now either cook on a flat toasted sandwich maker with the lid positioned just above the cheese. Adjust the level on the side of the machine to get it just right. You might need to place something on the lid to keep it level. Careful the cheese doesn't melt off. If it starts to melt off before the base is cooked then simply open the lid. Cook until the base is crisp to your desire.

Alternative cooking method:

Simply place under a really hot preheated grill. Make sure that whatever you are cooking it on (sheet pan, for example) is very well heated before cooking. Don't start cooking from a cold pan underneath.

And that is it. Here are the results of my double stacked version (each cooked separately and then simply placed on top of each other):

I did mine in the sandwich-maker to test. The only downside with this method is it is relatively low heat so you won't get any char marks or proper browning. The oven would achieve this quite nicely and would force bubbling of the base, which is kinda authentic.

Go crazy with your toppings. I love a simple margarita pizza as described above but it will hold normal pizza toppings as well.

This takes all of ten minutes to prep and cook in the oven or a little longer to cook in the sandwich maker depending on how crisp you like your base. It also costs less than R20 each, so it is budget friendly, time-friendly, office-friendly. And if you top it with less cheese and more toppings like mushroom, onion, garlic, chilli etc, it can be heart healthy. The gluten content in the flour tortillas is far less than a regular pizza base and you don't have to go crazy with the cheese to get decent flavours.

Enjoy...

Looks lovely. Reminds me of the Enchiladas at spur where you can put chicken and cheese in, or the ones from Mugg&Bean.

We don't have any of the above stuff in the office - only a microwave. Will that work?

why not put the pizza in the micro ...

we bought bases for like R10 each and added good toppings

and melted it in the micro for few seconds

worked well

I doubt it would work in the microwave. You'd land up with a very soggy base. Ask damagement to upgrade the microwave to a microwave-oven combo. They're cheap nowadays...

Because microwaves work by exciting water molecules at a certain frequency, which is why they do not crisp things up without copious amounts of fat. You'd have to cover your pizza in lard to get crispness in the microwave.

In addition, if you're buying bases they typically need to be cooked well. They are never fully cooked to the best of my knowledge. So your few seconds in the microwave won't cook the gluten in the flour and you'll end up with a very raw flour flavour.

And last, but not least, this method involves one R5 flour tortilla whereas a pizza base costs far more from the frozen food aisle. I also despise the flavour of those things.

All I tried to do here was come up with a cheap, quick, fool-proof way to make pizzas pretty much anywhere...

Looks good but for R20 you can get a pizza from Romans or even that other place which we shall not name.

The beauty of these is that they can be stacked so easily. You can emulate Debonairs' cream cheese stack pizza and it will taste better than theirs too. You can go crazy with topping and filling combinations.

You can also allow it to cool a little, then roll it up into one huge pizza wrap!

It's actually far less than R20. I just picked R20 and it was clearly less.

Each pizza uses a quarter of a sachet of tomato paste = R1,25
Each pizza will use maximum 100g of mozzarella cheese = R6,50 for the cheap stuff
Each pizza uses a single flour tortilla = R3 - R4 depending on where you buy from
Each pizza uses a sprinkle of dried herbs = R0,15

So we're talking about less than R12 per pizza. Additional toppings for pizzas are dirt cheap, which is why busy pizza joints are so profitable. And these are equivalent to large pizzas, whereas I'm sure those R20 pizzas are tiny little things...

I am sorry but that chicken cheese triple decker thing is like pure gold to a stoned person's body and soul.
