You will need:
1. A handheld stick blender and beaker.
2. One egg.
3. One pinch salt.
4. One cup oil.
5. A teaspoon of mustard.
6. A squeeze of lemon juice.

Put all of the ingredients into the beaker, with the oil coming last. Pick up the stick blender, push it the bottom of the beaker so that it is making contact with the bottom. Turn it on and keep it at the bottom for 5-10 seconds. Then slowly pull it up for another 5-10 second. Et voila! Homemade mayonnaise.

Put it into the fridge to make it a bit firmer, and eat within 3 days or so. Be warned, this does contain raw egg of course.

hmm yummeh. love me some mayo. all that oil makes my eye twitch a little, though. can i use olive oil?

So mayonnaise is egg and oil with a bit of flavouring? I think I've suddenly lost my taste for the stuff...

:D

I can send you my recipe for mayonnaise cake if you want it? Yes. Replace oil and eggs with mayo ;)

For a healthier option, replace the 'oil' (probably sunflower) with odourless coconut oil or use avocado oil. Sunflower and conola oil is very unhealthy. As is margarine etc.

Recipes tend to say avoid olive oil because of its strong flavour. They usually recommend sunflower oil or other less flavoured oil.

Yes, it is oil and egg, but it will be a LOT healthier than store bought mayonnaise. I dont have a jar of store bought mayonnaise on me, but I think they mostly contain sugar, starch, water and colourant. And sugar is far more unhealthy for you than oil. Believe it or not, this fatty mayonnaise is MUCH better for you than sugary mayonnaise. Butter never gave anybody diabetes!

Yeah it is, the only time I ever read labels is when I forget to take my phone to the bog.
I don't think you'd find it on the label. I also learnt what was innit by reading a recipe for homemade mayo

Wrong! Wrong! Wrong! It's minimum 52% vegetable fat so it's not mostly sugar

Fair enough. I think homemade mayonnaise is closer to 90% oil by volume. Still, homemade mayonnaise contains 0 sugar and will be healthier for you.

EDIT:

Also remember, sometimes they have to label it as salad cream or salad dressing or something like that. Its because they dont always meet the minimum requirements for actual mayonnaise.

I mean, you get fat free mayonnaise. Thats not mayonnaise, and they will replace the fat with sugar. Look up Kraft Fat Free mayonnaise.

Heres another one from Gordon Ramsay which is really good:

3 egg yolks
teaspoon of dijon mustard
pinch of salt
pinch of pepper (freshly ground if possible)
1 lemon
1 1/4 cups of flavorless cooking oil

Directions:

Put the egg yolks in a food processor with the dijon mustard. and turn the food processor on. The first 30 seconds of making mayonnaise is the most crucial, so be careful during this period and go slow with the oil. SLOWLY begin pouring the oil into the food processor while it’s on. After 30 seconds or so you can start pouring faster. Turn off the food processor when you’ve added all the oil.

Add the salt and pepper, then cut the lemon in half and squeeze the juice into the mayonnaise mixture. Give the mix a quick burst with the food processor and done!

Store the mayonnaise in the fridge.

See above - healthier than store bought mayonnaise.

EDIT:

Thanks johnnybfn.

the advantage of my method is that it removes all of the difficulty. You dont need to add the oil slowly, you just dump it all in, and it works. Much easier than the other method!

Those oils are damn expensive.
