bwana - can I talk to someone on google talk from skype or vice-versa?
Not at this time. At one time it looked hopeful http://googletalk.blogspot.com/2006/08/talking-with-skype.html.
Then again google and ebay just had a bit of a falling out didnt they?

There are so many different providers to keep up with nowadays but I believe FRING allows one connectivity to a number of different services from one application.

Well that's what SIP is supposed to remedy, a standard by which VOIP can be addressed and transferred, though it doesn't restrict what information gets passed.
Being a proper standard, it doesn't get pushed to market as easily or quickly as a propriety one like Skype uses, but is much better in the long run.
"Some efforts have been made to integrate SIP-based VoIP with the XMPP specification used by Jabber. Most notably Google Talk, which extends XMPP to support voice, plans to integrate SIP. Google's XMPP extension is called Jingle and, like SIP, it acts as a Session Description Protocol carrier."
